As the 2025 Margaret River wine harvest comes to a close, we reflect on what has been an extraordinary vintage at Fraser Gallop Estate. This season was defined by ideal growing conditions and meticulous vineyard management, resulting in premium single-vineyard wines that truly express the Wilyabrup terroir. With the grapes now harvested and the winemaking process underway, we look ahead to the exciting journey these wines will embark on in the coming months.

A Snapshot of Vintage 2025

The 2025 vintage in Margaret River was shaped by a cool, wet winter followed by a warm, dry summer—ideal conditions for crafting high-quality Cabernet Sauvignon and Chardonnay. The resulting fruit showed excellent concentration, vibrant acidity, and a depth of character that will define this exceptional year.

“Our vineyard saw fantastic growing conditions this year,” says Mike Bolas, Fraser Gallop Estate Viticulturist. “The combination of a healthy winter rain profile and a dry summer allowed for slow, even ripening, producing fruit of exceptional balance and depth.”

At Fraser Gallop Estate, our privileged location in Wilyabrup, with its gravelly loam soils and maritime climate, proves why this sub-region is regarded as one of the best for Cabernet Sauvignon and Chardonnay in Australia.

What Happens Next?

While the harvest may be over, the work in the winery has just begun. At Fraser Gallop Estate, our philosophy of minimal intervention winemaking ensures that each vintage truly expresses our terroir.

1. Wild Fermentation

Our grapes undergo wild fermentation, utilising the natural yeasts present in the vineyard. This slow, natural process enhances the purity of fruit flavours, creating wines that are distinctive and reflective of our estate.

2. Ageing in French Oak

Following fermentation, the wines are carefully matured in premium French oak barrels, which add complexity and structure while maintaining balance and elegance. We use oak sparingly to ensure that the Cabernet Sauvignon and Chardonnay retain their distinct regional characteristics.

“This vintage has given us fruit with remarkable vibrancy and depth,” says Ellin Tritt, Fraser Gallop Estate Winemaker. “The Cabernet is already showing incredible structure, and the Chardonnay has stunning acidity and balance. We’re excited to see how these wines evolve.”

3. Bottling and Release

Each wine is closely monitored to determine the perfect moment for bottling. We prioritize quality and consistency, ensuring that every bottle of Fraser Gallop Estate wine upholds our reputation for excellence.

Looking Ahead: The Future of the 2025 Vintage

The 2025 Cabernet Sauvignon is already showing a deep tannin structure, rich blackcurrant and cassis flavours, and remarkable aging potential. Meanwhile, the 2025 Chardonnay offers lively acidity, minerality, and elegant fruit expression that will evolve beautifully over time.

While these wines won’t be available for purchase just yet, we are confident they will stand as benchmarks for what Wilyabrup and Margaret River can produce.
